Espresso machines get most of the visual attention, but the grinder is just as important. It controls the particle size of the coffee and therefore how easily water can move through the coffee bed.
Why grind immediately before brewing?
Grinding dramatically increases the surface area of the coffee. Aromatic compounds dissipate faster, which is why espresso is normally ground on demand.

Grind size and extraction
A finer grind generally creates more resistance and a slower flow; a coarser grind allows water to pass more easily. The barista evaluates flow time, dose, beverage weight and — most importantly — taste.
Why adjust during the day?
Coffee and environmental conditions change. Temperature, humidity and hopper level can all affect grinder behaviour, so a professional barista checks the espresso throughout a long service.
The grinder in a workshop
Learning to adjust a grinder is one of the best ways to understand espresso. It shows immediately how a small technical change can alter the flavour in the cup.
